Every polygon has a U-V value which corresponds with a vertex on that polygon. U is horizontal and V is vertical. So a value of 0,0 is top left on the texture and 1,1 is bottom right. I usually find the poly in GPL Editor and write down the four UV values, then draw them on the texture to find out the mapping. Then I draw the mapping how I want it to be and recalculate the UV values. You can divide the UV value by the texture dimensions, so if you have a 256x256 texture and I have a texture coordinate of 126,126 the UV value will be 0,5 , 0,5.

I hope that makes sense :) . If something is not clear I'll try to come up with an example if I can find the time :)

Please note that the vertices which make up the polygon need to be in anti-clockwise order. The vertex order determines whether the side of the polygon you look at is 'up' or 'down'. If your polygon faces the other way it might not get drawn :) .
